TWD - Pumpkin Muffins

Is there anything more "fallish" than the smell of a pumpkin roasting? Perhaps the smell of pumpkin muffins baking. Kelly of Sounding My Barbaric Gulp chose the perfect Fall recipe for this week's Tuesdays with Dorie.

I just love roasting squash and pumpkins so I bought a great big pumpkin, cut it in half, removed the seeds and put it in a 350F oven for an hour and a half. Once cooked, it was really tender so I just scooped out the flesh, mashed it with a fork and voilà! homemade pumpkin purée.

I used pumpkin seeds in the muffins and also on top to decorate. I just thought as long as we were in pumpkin mood, why not go all the way! I loved the spices in these and the golden raisins added just the right amount of sweetness. I might make my next batch with chocolate chips though as the kids didn't care much for the raisins. I figured as much!

LyB, these are delicious! I saw Jamie making squash muffins the other day and felt like trying the recipe. These look way better!

Weren't these just scrumptious? I just had one for breakfast. I will try chocolate chips next time with some craisins. I didn't drop the temp, but did drop the cooking time as they were done long before 25 minutes.

Oh wow - I am so impressed that you went with fresh pumpkin! They look so delicious. Although I loved my sunflower seeds on top, I think pumpkin seeds would be great too!

You should try candied pumpkin seeds for your next batch. It just guilds the lily and makes the seeds that much more delicious. Basically just make them the same way you'd make candied pecans. Stir seeds into a glaze of butter and brown sugar (i toss in a dash of cinnamon too) and mix until seeds are coated. Spread on a baking sheet and bake until golden and the glaze has dried to the seeds.

These are sooooo good! I actually got the idea from the pumpkin spice muffins at Tim Hortons. (the coffee chain, here in Canada) They use some kind of candied pumpkin seed on their muffins and it inspired me to try to reacreate it! Boy are they good... well worth the effort.

Anyway, just thought I would suggest that to you because you seem to like pumpkin seeds. :)

I am cooking a pumpkin tomorrow for a cake. Did you use a pam pumpkin. That seems to be the only cooking pumpkin available that I can find. Also I just bought Dories book for $9.99 at Ross so I plan to join this week. I love the pumpkin seeds on yours.
