Weather Troubles

The weather has been so weird lately. One minute it's sunny, humid and intolerably hot and the next minute the sky breaks open and rain is falling for the next hour. And then the sun comes out again and it gets all hot and humid, again. That is not baking weather. At all.


And I feel like baking. I feel like having cake or cookies but the thought of the oven being on at 350F for more than an hour is just the thing to get me out of my baking mood. So I look at blogs and check out ice cream and sorbet recipes and I'm always missing one key ingredient. Why didn't I think of this when I made my shopping list last weekend?

OK, enough of this feeling sorry for myself. I made these peanut butter cookies a few weeks ago, with every intention of sharing them with you but other things had to be done and they've been patiently waiting their turn. I'm not usually a big fan of peanut butter in baked goods but peanut butter cookies are the exception.

Maybe it's the crispy, crunchy factor that I like in these or maybe it's the chocolate chips but in any case I like these a lot. So much that, I wish I had some right now. So much that I might brave a 350F oven for an hour or so. Oops, out comes the sun again... No, no baking for me today. Excuse me while I get my ice cream recipes out and go make a shopping list.

The weather has been so warm! It's funny that your weather there sounds like Florida weather here.

It's been in the 100's or the low 60's here. It starts off cool and by the time I gather the ingredients I need to bake with it's hot again. Once it's hot I no longer want to bake. But the cookies you made are delicious and I know this from personal experience. I made them the day after she posted them. These cookies will certainly put anyone in a good mood.

I totally agree with you about not baking in this heat. But, like you, I'm really missing it!

I knew there had to be an upside with living in tropical weather-- I'm perfectly accustomed to baking in extreme heat :) Actually my oven is a well-sealed electric oven, so there's not a lot of leakage except when I open the door.
I'm a fan of peanut butter in any baked good, so of course I'm loving your cookies! Can't wait to see your ice cream :)

LyB, these look so good! I love peanut butter and the problem is NOT eating the entire jar before actually baking something with it... :)

I can relate on the heat...it's been so hot here! And we are supposed to be having rains already...

mother nature is so fickle. there are very few things for which i would turn on my oven when it's as hot as it has been lately. i'm afraid peanut butter cookies are not on the shortlist, but they do look awfully good. :)

You and I must be on the same wave length, I also have been craving cakes and cookies but haven't done them for fear of baking along with 'em... And again, I too am feeling the trigger of ice cream and sherbet making. I guess I just need a kick in the BEEP!
So, I do like you and surf the recipes others have been doing in the hopes of feeling full without having to make them: THANKS FOR THE COOKIES, they were amazing! LOL

Oooh, those look good! Earlier in the week, during our heatwave, I naturally got the baking bug and baked 2 different kinds of muffins. I never have everything for ice cream, either.

I am right there with ya....on the "always missing an ingredient"..I just bought hot dog buns for a bbq, but forgot the hot dogs. Case and point.

Haha! I know that feeling...I really want to bake a cake but I just discovered we have no flour! That would help! Cookies look delicious!

I'm the worst about missing just one ingredient. Trips back to the store typically run me an extra $20 with all the impulse purchases! These cookies look amazing.

And during our heatwave? My thoughts turned to baking, naturally. Made two batches of muffins. What is wrong with me? :)
