Moving on to this week's recipe which is Dorie's Black and White Banana Loaf. I was so happy with Ashlee's choice. This was the first recipe I wanted to try when I got Baking from my Home to Yours, but I resisted since I wanted to try it at the same time as all the other Dorie
As I looked at the ingredient list and compared it to my usual banana loaf, I thought it looked like there was a lot of liquid. Many of the other members confirmed this in the "P & Q" so I decided to omit the milk completely. Which turned out to be a great choice, the batter was just thick enough and the marbling effect came through beautifully.
This was one gorgeous and delicious loaf of banana bread. The nutmeg wasn't overpowering, the chocolate complimented the bananas perfectly and the rum added a surprisingly pleasant after taste. As for the lemon, I couldn't taste it at all. The only thing negative I could say about the loaf, at the risk of sounding like a certain Iron Chef America judge, is that it was "a little bit oily". But I think that's because that first slice I had was still a bit warm, it got better the day after.

je n'ai pas trouvé la pâte trop liquide, mais c'est peut être parce que j'utilise de la farine non blanchie..je l'utilise aussi pour faire mon pain sans pétrissage, et je me suis aperçue que ça demandait plus d'eau qu'avec de la farine tout usage.

Looks great Lynn!! I actually didn't have a problem with runny batter at all and I think I put a little extra milk. But I did cut back on bananas and use a little extra flour just in case.

My batter wasn't runny, but it was so flavored that nothing stood out.
Your loaf looks really wonderful. I think it is one of the best I have seen. I did not have any trouble with runny batter and I followed the directions as she has them in the book. I wonder what the difference is for those who did? Just curious. I would never be brave enough to leave the milk out...you rock! Yours looks perfect...very very good.

How interesting that you left out the milk. The texture of your loaf is lovely, so I think I will make a note in my book to do the same next time.
Oh my word, yours looks the best out of any ones elses I have seen so far!! Perhaps it was th emilk, your texture is great! I am lactose intolerant, but I used milk instead of soy becuase this was the firs time making the reecipe- but hey wow! Concept! No Milk at all!

Great tip on just leaving out the milk - mine wasn't too runny, but it's easier to add liquid than take it away. Beautiful loaf!

The marbling looks beautiful and so does the crumb. I'm glad you liked the cake the next day. While there's something very comforting about warm cake, warm cake is really not finished -- I always think of the cooling period as the last step in the baking process, since it's the part that gives the cake the time it needs to gather itself, pull together its flavors and finally set its texture. I'm happy you liked it in the end -- it sure looks good.
