As Luck Would Have It...

I love getting comments on my posts. I mean, don't we all? One of the reasons I love this so much is because then I discover new blogs with incredible recipes. One of these new blogs I recently discovered is Baking-Haven. Abeer left a comment on my Chunky Peanut Butter and Oatmeal Chocolate Chipsters post and I clicked on over to her blog. She has some great recipes, and I intend to go through her archives!

But the thing that caught my eye right away was the Vietnamese Chicken Meatballs recipe. We all love meatballs around here and a new recipe is always welcome. And as luck would have it, I had pretty much all the ingredients in my refrigerator. So I made these fabulous little chunks of chicken with just a few minor variations. I used all parsley as I didn't have mint and I don't like cilantro, and I used already ground chicken instead of grounding my own. No food-processor, you see. The meatballs were fantastic! I was a bit unsure of the sugar coating at first but it really helped caramelize the meatballs and it gave them just a tad of sweetness. All in all, a success, all thanks to Abeer and a nice comment on my blog. Doesn't it just make you want to click on over to some new blogs you've never read? These chicken meatballs look yummy! We don't usually have chicken meatballs: for some reason, they don't sell chicken already ground. But I might try grinding some up ourselves just to make these meatballs. Thanks!

Aw, well what about blogs without recipes? These sound and look delicious. I assume the lemongrass was fresh? Not findable where I am. Do you soak the dry stuff to make it workable?

That looks so delicious Lynne! I love chicken burgers, so I'm sure to love these too :) I'm not a huge fan of cilantro too, so I'm sure I would've made the substitution.

These look wonderful, Lynne! I've bought some like these frozen at the Asian store, but homemade is definitely better!

yes indeedly (new word), these are great. cilantro (or should i say coriander) is involved, so i'm automatically on board. :)

Love the sound of these - interesting about the sugar coating.
I'm a coriander/cilantro fan so I'd use that, but like you I'd miss out the mint.

chicken meatballs!? yum. this looks really good and a great alternative to red meat...
