Desperately Seeking Inspiration

I feel like I have very little creativity these days, and when Martin came home from the grocery store this weekend with a package of boneless, skinless, chicken breasts, I had no idea what to do with them. No idea, at all. So I turned to my trusty little Food Blog Search and typed in Chicken Tetrazzini.

I've never had Chicken Tetrazzini, I probably watched some Food Network show lately that featured it and the name stuck in my head or something. In any case, I found the perfect recipe for a few of my boneless, skinless little friends. Gretchen, over at Canela & Comino, has this great, lightened up version of Chicken Tetrazzini, and it's just perfect! I added some peas, for color, and some garlic because I love garlic, and I might have used a bit more pasta than was called for in the original recipe, but aside from that, it's perfect as is. I know I've said this before, but thank goodness for bloggers, I don't know what I'd do without you guys inspiring me! So go visit Gretchen, and get inspired!

Thank you Nic! I haven't made the last 2 TWD recipes, lack of interest in the ingredients and lack of time... I swear, May is flying by and I haven't even noticed! Next week though, I promise! :)

Love food blog search! I turn to it first before I ever try FoodNetwork or other sites. This looks so good. I've only had Tuna Tettrazini. This looks like an awesome idea for dinner.

Reminds me of the Stoffers Frozen version from when I was a kid! This looks a million times better! I will have to try this one!

i'm all about your additions--peas and garlic, two ingredients that can never steer you wrong. i'm also loving that crunchy topping!

i think i'm devoid of any creativity whatsoever, so the food blog search was a godsend for me. :)

Ah...the ubiquitous boneless, skinless chicken breast. I've been in the same quandry this very week! And I agree with you, the world of food bloggers is a wonderful answer to many of lifes culinary quandaries!

I have the same reaction in front of chicken breasts and my MIL just brought me a bag of them...This is going to be on the menu next week!

Psh! I would have never known that you were suffering from lack of inspiration! That looks delicious! I've never had chicken tet before but Jamie Oliver prepared it on his Great Italian Escape show (was it?) and I've been curious about it since :)

Love the look of this dish - I've not heard of it before so will hop over and view the recipe. I have lots of days where I feel uninspired by whatever ingrediets are lurking in my frige and agree that fellow food bloggers are always the best place to look for inspiration!

Those are some well dressed chicken breasts! They look absolutely delicious. BTW, the dish was named for Luisa Tetrazzini, a famous opera diva from the late 1800's to early 1900's.
