I know I've said this before but I'll say it again. I'm not a big fan of peanut butter in baked goods with the exception of peanut butter cookies. I don't know what it is about peanut butter that I don't like in recipes but I'm pretty sure I like peanut butter cookies because of the crunch factor.
In any case, I have to thank Stefany of Proceed with Caution for this week's Tuesdays with Dorie recipe as these cookies are fabulous. I even added some peanuts to these after baking my first batch because they needed the extra peanut taste. If I have one thing to say about this recipe, it's don't overbake these cookies! I baked my first batch for 15 minutes and they became hard as rocks upon cooling.
For the next batch, I kept the batter cold and I didn't flatten the balls of dough before baking them. I took them out of the oven after just under 12 minutes and let them sit on the baking sheet for a few minutes before transfering them to cooling racks and they were perfect. They won't look done and they'll have no color at all and that's what you want. They stay moist and chewy once they've cooled. And if you're like me and PB in baked goods isn't your thing, the peanut butter taste in these is barely there. Maybe it's the chocolate or maybe it's the oatmeal that is overpowering but the peanut butter is really only an after taste. I implore you not to make the same mistake I did and taste these cookies just out of the oven, because you won't be able to stop. The texture of these cookies while they are still warm is just perfect. The chocolate is melted, they are crispy outside, soft inside and with a glass of cold milk, well, you'll never want to eat anything else, ever, again.
So now that you've been warned, you can turn to page 73 of Baking from my Home to Yours by Dorie Greenspan (or check out Stefany's blog) and make the Chunky Peanut Butter and Oatmeal Chocolate Chipsters, right now and eat nothing else for the next few days or you can control yourselves and wait for next week's recipe, Chocolate Malted Whopper Drops. As for me, I'm not sure I'll have any more self control by then!

I'm not a huge fan of peanut butter in baking either. I love it on toast but thats about it. I've noticed it's massive in the US though. Your cookies look great!
OH. MY. That melty chocolate chip in the top photos makes my knees weak.
Those pictures are just gorgeous! The melty chocolate chips are making my mouth water!
We liked the dough best.
Your cookies look so good, especially the melted chocolate bit! I loved these cookies straight from the oven as well.
the first and third picture make me want to eat another almost whole tray of these. not that i did that or anything. :P well, maybe i kind of did. but it was over two days.
My children love peanut butter, they were glad they could eat the remaining in the jar...
Great looking cookies.

I wish I had added some peanuts or pecans to mine! Yours look great.
Well, your enthusiasm for these make me think that another peanut-butter-in-baked-goods disliker (me) should give them another chance. They look very good.
I've been craving a hearty cookie as of late, and this sounds like just the ticket! It seems like the perfect pick as we head into fall.
Your cookies look nice and chunky, yum!
Good tips. I agree. If I make these again, I won't flatten them. It just made them spread out more and I prefer rounded to flat cookies. Your cookies look delish! Great job!

I am with you on the peanut butter maybe because I have an intolerance to it. Your cookies look amazing! Great photos!
Ohhhhh wow - these look fantastic!!

Those look so good! I found I liked these baked just a touch longer than I normally bake cookies, which if I recall was 13 minutes. I bet the whole peanuts were great in them.
These look so warm and gooey. Chocolate and peanut butter is favorite combination of mine!

Ooohh - gratuitous melty chocolate shot - I am so there! Your pictures look great and I think I will add peanuts the next time too.
They look wonderful! Glad you enjoyed these, I agree though - more peanuts and underbake them. Yum!
Amen, sister. I took a nibble of one before breakfast, and four cookies later I had to get them the hell out of my house. Nom nom nom.
I always love your pictures! Your cookies look so good!
These look wonderful! I love your pictures!
I am not into PB so much myself...but these pics are amazing!!
Great idea to add more peanuts to get that extra crunch. I'll try that out if I were to bake again. :-)
Yum..Your pictures are wonderful. I agree with the straight from the oven to my mouth part! I love a warm cookie with ice cold milk.
Whew! It's hot here in Montreal, but I'm considering turning my oven on for these!
PS Happy back to school for your kiddos
Oh, how I loooove cookies right out of the oven. And if I can't stop eating them, well, that's ok, too. hehe.
(I think we were just reading on each other's blogs at the same time--hee!)
Your cookies look great! And I agree that they were so delicious straight from the oven!
melty, melty delish!
yum! Great job! They look delicious!
Beautiful cookies. Your pictures really are lovely. I'm glad you liked the cookies. You are so right about the cooking time. I messed up all 5 times I put a sheet in the oven. They were just a touch too done.

Those are gorgeous, especially dunked in milk.
Hee! I bet you "Proceeded with Caution." ;) But I do like peanut butter in both sweet and savory applications-- in fact I'm craving for yours now! (Since you added peanuts in the end, can we say you've been converted? :)
I do like peanut butter so I'm sure I love this :) They look scrumptious!
well geez, if you're gonna implore me, i guess i'll go ahead and heed your advice. :)

I love the shot with the melted chocolate, very tempting!
You perfectionist, you...LOL! Although baking is a science, sometimes it's all about intuition, isn't it?
Delicious! I could really go for some of these right now!
Nice shot of the gooey chocolate!
Lordy those look good and I love the photo with the cookie sitting oh so gently on the glass of milk.
